  • Slow cooked carpaccio of veal head served with Tortue sauce and shellfish.

  • Perfect egg with green lentils, tops of broccoli and hints of citrus.

Main courses

  • Fish of the day, vegetables and lemongrass broth, glazed vegetables and roots, grated seabass dry eggs.

  • Guinea fowl fillet, choux pastry stuffed with chestnut, pear and cider vinegar purée, confit chestnut and caramelized onions.
